
Julianna's Pumpkin Protein Bars are a nutritious and delicious option for a quick snack or breakfast on the go! Make them ahead of time so you have something healthy and easy on hand!
Ingredients:
84 grams Coconut Flour
26 grams Protein Powder
2 grams Pumpkin Pie Spice
188 grams Almond Butter (or seed butter for nut allergies)
150 grams Maple Syrup (all natural)
7 millilitres Vanilla Extract (pure)
184 grams Pureed Pumpkin (not pumpkin pie filling)
23 millilitres unsweetened almond milk (or non-dairy milk of choice)
180 grams Organic Dark Chocolate Chips
24 grams Coconut Oil (melted)
Instructions: (for 12 servings)
1. Line a pan with parchment paper
2. Add the coconut flour, protein powder and pumpkin pie spice into a large mixing bowl and whisk to combine
3. Using a small pot over low heat, add the almond butter and maple syrup and whisk until combined and sticky. Then add the vanilla extract
4. Add the wet ingredients to the dry along with the pureed pumpkin. Stir until it is all combined. Next, add the milk and chocolate chips. Stir until well combined (the dough will be thick)
5. Transfer the dough into your pan and flatten with your hands, ensuring the dough is packed. Refrigerate for at least 30 minutes.
6. Remove the dough from the fridge and slice into even bars. You can drizzle the bars with melted coconut butter, melted dark chocolate, or add your favourite toppings such as pumpkin seeds/unsweetened coconut flakes!
